You can also chose NOT to cut the belly and slice down the spine either side, which keeps the fillets connected via the belly to form butterfly fillets, then the innards can come away in one piece. Whatever’s easier really. Either way Damian’s still at it in his own world.

In Damian's world, everything is silent. The mackeral has been flipped and Damian slides the knife down the other side of the spine, prying the other fillet from the ribcage as he goes. The spine is then completely separated to reveal two neat fillets.
